Lightly Curried Asparagus Soup

So, as happens all too frequently, I just couldn’t resist a bargain bunch of asparagus –    even though I had no particular use for them. I brought them home, put them in the refrigerator (I didn’t put them into a green bag that would have extended the life until I really wanted to use them) and 3 days later they are looking sad.  Soup, of course is the great burial ground of dying vegetables – so I took all the sad things I had in the fridge – 1 pathetic leek, 1 mangy stalk of lemon grass, and the drooping asparagus.  Sounds appetizing, yes??  Unbelievably this is now one of my new favorite soups! In my first recipe test I had red pepper flakes but it made it  pretty spicy  so I eliminated them from the recipe – you may want to include some if you like your soup spicy.  If you can eat dairy – this soup would be yummy garnished with yogurt.

Really Divine Green Gazpacho

With summer completely here there’s nothing nicer than a chilled soup to start a meal or have as a snack.

I was sitting in my allergists waiting room with nothing in particular to do.  Usually her magazine rack is filled with sports stuff and gossip magazines – none of which interest me.  This week, however, she had a copy of the Food Network Magazine.   I was thrilled to see it as I’ve had a “special offer” from them sitting on my “to do” pile for weeks.  I wasn’t sure I wanted or needed another food magazine especially since most of the recipes in these publications are not suitable for a paleo diet.

One of the articles featured  3 different gazpacho recipes.  I was interested in that article because most of the authentic recipes include plenty of bread.  I was delighted to find that these did not.  In fact they were very nice and slightly unusual.  Two of the recipes included grapes – something that I would never have thought using, but upon reflection seemed an interesting idea.  The recipe for green gazpacho also included avocado.

It’s not that often I am inspired to run home and try something I’ve seen in a magazine, but since Fairway is just a few steps away from my allergist’s office, I stopped in and picked up the necessary ingredients and Voila!

I think this is a pretty delicious form of gazpacho.  The grapes give it a subtle sweetness and the avocado a really creamy texture.   The toasted almonds (I know they don’t look toasted in the photo, but trust me – they are)

Kale and Sweet Potato Soup with Tiny Turkey Meatballs

As I’ve mentioned recently (or maybe not so recently) I’m enamoured with soup meals -that is soups with enough protein, vegetables, and starch to constitute a complete meal in one bowl.  This one came about in what is not uncommon in my kitchen – leftover stuff.

I had lots of chopped kale left from the Kale and Brussels Sprouts Salad I posted last week and, due to a miscalculation on my part, way too many sliced sweet potatoes from the soup kitchen.  Further, I had purchased a pound of ground turkey at the farmer’s market (I love their turkey products) and so…Ta Ta  Sweet Potato and Kale Soup with Tiny Turkey Meatballs.

I love saying that:  Tiny Turkey Meatballs….Tiny Turkey Meatballs…. I love saying that because whenever I make meatballs of something other than beef I usually name them Turkey Balls or Lamb Balls or Pork Balls – all of which are terrible names.  However, browsing someone’s blog (can’t remember whose or I would give you a link to them) I noticed s/he made a dish with turkey balls and called it turkey meatballs…Why Didn’t I Think of That????  If only I could go back to any of my cookbooks that have recipes for some form of meatball and rename them properly…alas it’s too late for past balls – but you know all future balls will be meatballs!

Portuguese Sausage and Vegetable Soup

I have always loved “soup meals” during the colder months (although this year you could hardly have called October or now November cold months).  This morning I went out to walk the dog,

felt the nip in the air, came in and immediately went to the kitchen to make soup.

A soup meal is more than just a bowl of soup.  It’s soup laced with enough protein, starch, and vegetables that you don’t need anything more to make a complete meal…well, in the BP (before Paleo) days I would have added some crispy bread to the menu.  The reasons that I love soup meals are many:

It can be made in large batches and freezes well so you can alway have an easy/quick meal on hand

Easy clean-up:  In addition to being a one spoon, one bowl meal, it’s usually also a one pot meal.

If you have a crock pot/slow cooker (and know how to use it) it can be prepared in the morning and then is ready by dinner

I started cooking soup meals when my dad was on Chemo.  His taste buds and appetite had changed; food no longer interested him and he was just getting thinner and thinner.  He was, however, willing to eat soup – so I would “hide” lots of small pieces of meat or chicken and some kind of starch (rice or barley or potatoes) in my soups and he would eat the whole thing.  If you have a friend or loved one who is having a hard time eating, try a soup meal and see if it does the trick.

I adapted this soup from a recipe I wrote for “1,000 Vegetarian Recipes” – obviously there was no sausage or ham in that recipe, but I remember loving the combination of cabbage, greens, and potatoes.  I used hot Italian sausages but I will warn you that the soup is pretty spicy – you may want to use sweet Italian sausages or some combination of the two (I’ve made this sometimes using turkey sausage and sometimes pork), but you can also use cooked sausages like Kielbassa or maybe even frankfurters or cured meats like corned beef or tongue (though I honestly haven’t tried any of those yet).

In any case…look for more soup meals in the near future.

Cauliflower, Carrot and Turnip Soup

I’m already into the third week of my CSA (community supported agriculture) so I am knee deep in organic vegetables.  I got lovely little white turnips, and divine basil and very fresh parsley.  I combined that with carrots and cauliflower I had on hand and made this delicious soup.  Besides being delicious an added plus is although it’s a thick, rich soup, there are no starches in it.

Just to let you know, I’m giving my apartment a facelift (restoring my floors and painting) and I’ve been just a crazy woman putting away the tons (and I mean TONS!!!) of junk that I have acquired over the years.  Of course this would have been a great time to purge and, in fact I have given away a fair amount of books, etc. but my theory is “if you have the room to store it, and you might need it in the future, keep it.”  I formed this policy when I first moved into this apartment and did a major clean out/give away only to find I had given away stuff that I needed only a month later  : (

Manhattan-style Clam Chowder

Every now and then I get a craving for clam chowder. In my dreams it’s that velvety, unctuous, creamy New England Clam Chowder with just a hint of bacon…

Oh well, that was before the “dairy and wheat problem” and now I can dream of it, but sipping it is out of the question. But that doesn’t mean I have to forgo Clam Chowder – there is always Manhattan-style that has its own special appeal. Personally, I like it with a bit of a bite from plenty of black pepper, but you can tone it down to your own tastes. Also, after lots of fooling around with the recipe, I find that chopping all the vegetables fairly finely helps the flavors meld so much better than larger pieces. Of course having a food processor makes this a snap.

I make this on a kind of regular basis. It’s only fair to tell you that this is more of a vegetable soup with clams than a clam soup with vegetables.   It makes a large batch, but it freezes nicely so you don’t have to worry about what to do with leftovers.

About the ingredients:

The Clams – So I confess that I am a horrible person because all the recipes I saw online from “big name” cooks start out with fresh clams and honestly – that is not something I routinely keep in my pantry or even refrigerator. So, I use canned minced clams and if I want to boost the clamminess, I substitute clam broth instead of some of the vegetable or chicken broth.

I use waxy (boiling) potatoes because I think they hold together better than baking potatoes.

I use 2 kinds of canned tomatoes – crushed and stewed.  The crushed gives a more intense tomato flavor and the stewed (or you can use diced) gives you the tomato pieces.

I love this soup because I always have the ingredients on hand so when the weather is particularly nasty and I want soup, I don’t have to go out of the house to buy any ingredients. Continue reading Manhattan-style Clam Chowder

Palak Shorba (Punjabi/Mughlai Spinach Soup)

There’s a pretty good Indian restaurant just a few blocks from my apartment called Swagat.  They make a spinach soup with chicken that I always order and it occurred to me that I could probably make it at home without too much difficulty.  As I often do, I googled Palak Shorba and checked out a few of the recipes.  The one that sounded best to me was by master chef Sanjeev Kapoor.  His recipe is vegetarian, instead of the chicken soup I get at Swagat, and used lots of whole spices.  I simplified the recipe but used a similar flavor profile.  Traditionally Palak Shorba is finished with a bit of cream; but, since I’m dairy free, I use coconut cream instead.   I make this recipe often.  Frequently, I revert to the Swagat version by adding shredded cooked chicken and eating the soup as a main course.

Today I had lunch with my friend Larry at Swagat.  I ordered the Chicken Palak Shorba and brought my own version of Palak Shorba to do a taste comparison.  NO CONTEST…mine was much better.  I was shocked and pleased…Larry agreed with me.

Sweet and Sour Cabbage Soup

I Love blizzards. When I went out shopping this afternoon the snow was coming down so hard that the flakes were more like micro-snowballs and some were even flower and star shapes.  I was so excited I stopped a stranger on Broadway and asked him to photograph my glove and email the photo to me – which you can see he did – aren’t New Yorkers the greatest people on earth??? (okay I am biased on that subject).  I was so amazed by these flakes I stopped several people on the street and in Zabar’s to show them. They probably thought I was a nut, but they all praised my flakes and enthusiasm…and then they (the flakes) melted and that was that.

By 6 when I walked Bella the snow had tapered off to almost nothing I was thinking this is going to end up a dud blizzard  : (  But here it is 1a.m. and I’m giving Bella her last walk of the day and it’s snowing pretty hard : )

The last blizzard we had I sat in my living room reading three Twilight books (it snowed for 3 days and I read one book each day).  It was pure heaven.

In addition to marathon reading, I love to make soup when it’s snowing.  BP (before Paleo) I would make hearty bean soups – split pea or lentil, now I make hearty vegetable soups.  This one is pretty simple and straight forward and delicious.  Everyone who has tasted it has asked for the recipe.  If you have a cabbage in your refrigerator, you probably also have everything else you need to make this soup without having to go to the store.

Here’s hoping I’ll wake up tomorrow to a winter wonderland.  Happy Snow Day!

Curried Zucchini Soup with Rum

I bought a lot of zucchini with the thought that I would make it as a side dish for Thanksgiving. However, I went with the vegetable medley and used only a half of one zucchini.  That left me with a few unused ones.  I could have made zucchini spaghetti – and I still might since I only used two of the 3 remaining zucchini for this soup.

I can’t claim inspiration for the rum as I found this combination of flavors in one of my favorite cookbooks:  The Summer House Cookbook by Chris Casson Madden.  It was published in 1979 and I’ve been using it ever since.  It cost $5.95 new – what a deal!  You can find used copies on Amazon for a penny + shipping, it’s worth getting and still a deal!

Butternut Apple Soup Two Ways

I’m serving soup as my first course for Thanksgiving.  I didn’t want to make butternut squash soup like everybody else serves (not to mention that I already have two recipes for butternut squash soup on this blog:  Anti Inflammatory Soup and plain old Butternut Squash Soup) so I decided to use more of my CSA apples and make a slightly curried apple soup.  I made the soup and although it tasted really good, there was only one problem.  The soup only made 6 cups and that’s a little too little for my 8 or maybe even 10 guests.  I looked around and saw I had some  leftover cooked butternut squash from the other night.  I diced it and added it to the soup.  Now I have 8 cups and it looks nice having little floating pieces of squash.  Of course I can never leave well enough alone so I decided to see what it would taste like if I just pureed it…FABULOUS!  So I guess I’m serving Butternut Squash Soup this year – like everyone else.

On the off chance that you are having less than 8 guests, the original apple soup is a really unusual and delicious choice.
