Paleo Pumpkin Bread


I’m going to my cousin’s house for Thanksgiving dinner this year.  In self defense I offered to bring the pumpkin bread so that it would be Paleo.  I have to confess/brag that I don’t think anyone there will even know that it is anything other than a regular pumpkin bread.

Paleo Pumpkin Bread


1 1/2 cups almond flour (Plus additional for dusting the pan)

2/3 cup plantain flour

1/4 cup ground flaxseed

2 teaspoons pumpkin pie spice

2 teaspoons baking soda

1/2 teaspoon cream of tartar

1/2 teaspoon salt

4 eggs

3/4 cup pureed pumpkin

1/4 cup honey

1/4 cup maple syrup

1/4 cup avocado or olive oil

1 1/2 teaspoons cider vinegar

1 teaspoon vanilla

Preheat oven to 350F.  Generously grease a  8 1/2 x 4 1/2 x 2 3/4-inch loaf pan; dust with almond flour.
On a piece of wax paper combine the almond flour, plantain flour, ground flax seed, pumpkin pie spice, baking soda, cream of tartar, and salt.

In a large bowl, beat eggs until frothy.

Beat in the pumpkin, honey, vinegar, and vanilla into the eggs.

Fold dry ingredients into egg mixture until well combined


Spoon batter into prepared loaf pan.


Smooth with spatula


Bake for 5 0 minutes.  Let cool 10-15 minutes before removing from loaf pan.   Cool completely  on rack before slicing
