These are the cookies that my friend Dori always used to bake for Passover. They’re a real hit and so easy to make it’s embarrassing. Like the macaroons last week, these are very sweet.
I don’t know about you, but I am knee deep in Passover preparations so I will keep this post short. Hope you’ll forgive me.
Paleo Pecan Passover Cookies
I think you could make these with walnuts or hazelnuts instead of the pecans, but I’ve never tried it myself.
1 cup ground pecans
1/2 cup maple sugar or light brown sugar
Pinch salt
1 egg white
1/2 teaspoon lemon juice
Preheat oven to 375°F. Grease a cookie sheet or line with parchment paper. In a medium bowl, stir together the pecans, sugar, and salt. Add the egg white and lemon juice. Stir until combined.
Form into 1-inch balls and place on cookie sheet. Press a pecan half into each pecan ball.
Bake 10 to 12 minutes. Transfer to rack to cool.
Makes about 14 cookies
